FRUITS OF THE SEA - DESERT STYLE (Serves 4)

Take 500gms of firm, fresh fish eg: Trevally, Flathead, Salmon or any other type of fresh seafood

  • Cut into thick chunks;
  • Combine 1 tablespoons olive oil with 2 teaspoons mirin, 2 teaspoons Desert Cajun Rub &

3 tablespoons chopped fresh parsley & a good squeeze of lime juice;

  • Leave to marinade for 1 hour;
  • Then panfry, BBQ or grill.... Serve with tossed noodles in garlic and butter and a fresh salad.
